The Struggle Is Real

I can say hands down this pregnancy has given me a run for my money!  I promised myself I would eat as healthy as I could and keep active during this pregnancy.  When I was pregnant with Jack I was put on pelvic rest early on which really meant I could just WALK!  I had such incredible swelling towards the end I couldn't even stand!

In this pregnancy I have eaten my share of CARBS, I have MISSED WORKOUTS and trust me I have been LESS THEN PERFECT!  My cravings this pregnancy have really been ice chips during my third trimester and no worries - no iron deficiencies here! They checked! :)  Thanks to my Shakeology I am actually on the HIGH END of iron!  

My first and second trimester proved to be the most challenging with insane food aversions.  I seriously couldn't [lan out food and what I wanted one minute I didn't want the next.  That lead to eating bland carb style foods.  NOT GOOD!

I am in my third trimester and have had heart burn his entire pregnancy.  Guess this baby will have a lot of hair right?  HA!  Food has still been a challenge for me but I am doing WAY better and sneaking in salads when I can.  

All In all I have taken this pregnancy day by day.  I eat as best as I can and do what my body allows me to do.  I am just so thankful that I could workout throughout this pregnancy and keep active.  It has made such a HUGE difference.  I feel better!  I look better!  My attitude is better!  I am setting examples for my little guy who is 3 years old!  If I miss a workout he tells me "Mommy you need to workout for the baby."  How awesome is that?  He gets it! :)

I want you all to remember regardless of where you are at in your journey you need to stay positive.  You might have 100+lbs to lose or you may have been struggling on and off for years to tighten that tummy from a c section.  Regardless of what it is you NEED TO STAY POSITIVE!  Your days will NOT be perfect all the time.  You will have bad days.  You will have bad weeks.  It happens! It's LIFE!  What is most important is that you acknowledge them and move on!

I have been a little too hard on myself this past week with eating, not working out the way I should and not being 100% committed.  Exhaustion along with swollen feet and hands took over.  Frustration set in.  Giving up felt real.  It crossed my mind to just give up and wait until the baby is here and the Dr. clears me to workout again.  I finally had some down time to myself today so I have re committed myself to working out and being healthy!  The struggle is REAL my friends - even for us coaches!  We are JUST LIKE YOU!

21 Day Fix Crock Pot Southwestern Chicken

21 Day FIx Crock Pot Southwestern Chicken
Cook on low for 6 hours or until chicken easily shreds. Allow shredded chicken to cook in the juice for 30 minutes after shredding. If the chicken is frozen, you’ll need to cook for 8 hours.

  • 3 Large Boneless Skinless Chicken Breasts (about 2 lbs??)
  • 1- White Onion, diced
  • 2- Bell Peppers, diced
  • 2- 4oz Cans Diced Green Chiles
  • 1- jalapeno (remove seeds if you don’t want the heat)
  • 1- 15oz Can Black Beans, drained and rinses
  • 1 1/2 Cups Frozen Corn
  • 2- Limes, juiced
  • 1 Cup- Chopped Cilantro
  • 1/4-1/2 Cup of Water
  • 3 tsp Coconut Oil

Chicken Seasoning:
  • 2 Tbsp Chili
  • 1 Tbsp Cumin
  • 2 tsp garlic
  • 2 tsp onion
  • 1 tsp dried oregano
  • 1 tsp sea salt (or pink Himalayan salt)
  • 1/2 tsp pepper
  • *optional: dash cayenne to taste
Makes 6 servings (if you eat it as is)– it’s a ton of food!!! Make it ahead of time and portion out through the week or use it for a big batch family meal >> whatever works for YOU! 21 Day Fix Breakdown: 1- Red, 1- Green, 1-Yellow, 1/2 tsp: serving size about 1 1/4- 1 1/2 cups, depending on size of chicken.

Additional Serving ideas and box break down:

*with rice
*in a corn tortilla as a taco (or even throw the corn tortilla in the oven and make tostadas or nachos)
*with additional beans or corn

Add a green:
*Over a salad
*with extra veggies
*as a lettuce wrap

Healthy Pumpkin Brownies

If you know me well you know I LOVE pumpkin and I LOVE chocolate.  So why not combine the two for a perfect harmony!  So here you go!  Enjoy this amazing and delicious treat!  These fudge style brownies are sure to hit the spot!

  • 5 tbsp Pumpkin puree
  • 2 Eggs, medium-sized
  • 1/2 cup All-purpose flour
  • 1/4 tsp. Baking powder
  • 1/3 cup Cocoa powder, unsweetened
  • 1/2 cup Granulated sugar
  • 1 tsp. Vanilla extract

  • Preheat the oven to 350F/175C and line a 9"x9" baking tray with parchment paper.
  • Stir the sugar, flour, cocoa powder and baking powder together in one medium-size bowl and make a well in the center.
  • Crack in the eggs and pour the vanilla extract and pumpkin puree into the well. Beat with a hand whisk for about 1 minute, just until the mixture forms a batter - don't over-mix!
  • Pour the brownie batter into the lined baking tray and bake for 12-15 minutes until set.
  • Use the parchment paper to remove the brownies from the baking tray and leave to cool on a wire rack for at least 30 minutes.
  • When cool, slice the brownies into 9 servings and eat! Or place inside a sealed container and store in the fridge for up to five days.

Clean Eating Chicken Minestrone

This amazing quick and clean chicken minestrone soup will be one your entire family will love.  As you can see per my picture I used what I had on hand which was frozen peas (not sugar snap peas).  Don't go crazy buying all new ingredients.  Use what you have!

  • 1 Tbsp. olive oil
  • 1 cup diced yellow onion
  • 1 cup diagonally sliced carrots
  • 1 cup diagonally sliced sugar snap peas (or frozen peas)
  • 1/4 cup chopped fresh tomato (or you can used diced canned tomatoes no salt added)
  • 1 Tbsp. minced garlic
  • 2 tsp. unsalted tomato paste
  • 4 cups unsalted chicken stock (I buy the Trader Joes brand)
  • 1 cup water
  • 5/8 tsp. kosher salt
  • 6 oz skinless, boneless chicken breast (about 1 1/2 cups cut into cubes or shredded)
  • 5 oz. uncooked alphabet or ditalini pasta (about 1 cup)

  • Heat a large pot over medium high. Add oil, onion, carrot, peas, tomatoes, garlic, tomato sauce, chicken stock, water, salt and bring to a boil.   Cook until veggies are tender (about 30 minutes).  
  • Add chicken and cook about 5 minutes or until chicken is done
  • Add in pasta.  Cook for about 3 minutes or until pasta is done

  • Don't feel the need to buy every ingredient on this list.  I used diced canned no salt added tomatoes and frozen peas.  Rather then spending more money on other ingredients.
  • Have your kiddos help you!  My son LOVED making this soup.  He loved mixing everything in and loved the alphabets at the end.
  • Double or triple the recipe and freeze some for left overs on a cold day!

It's the month of change and back to routines. Which also means us mommas are BUSY! We are trying to figure out our daily schedules again and get situated into a routine.

This also means teachers are back to work- feeling overwhelmed - getting their groove back - and needing time to re energize! What better time to start?!?

Pumpkin Applesauce Muffins

This is another delicious 21 Day Fix approved treat!  My little man, who is 3 loves them and so do I! :)  These are two of my favorite things - Pumpkins and Applesauce so how could it be bad? YUMS

  • 1 1/2 cups whole wheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice
  • Pinch of salt
  • 1/2 cup egg whites or 2 eggs
  • 1 cup pumpkin puree (if your pumpkin puree is quite liquidy, you may need to add 1-2 tbsp of flour)
  • 1 cup unsweetened applesauce
  • 1/4C-1/2C honey (use more/less depending on how sweet you like things – if vegan, use maple syrup and you can also use sugar if you prefer)
  • 2 tsp vanilla


  • Preheat oven to 180°C/350°F
  • In a bowl, combine flours, baking powder, baking powder, baking soda, spices and a pinch of salt.
  • Combine your egg choice with the pumpkin puree, applesauce, honey and vanilla.
  • Pour your wet ingredients into your dry ingredients, mixing until just combined.
  • Bake for 10-20 minutes, depending on size, until a skewer removes clean.

Container Counts:
  • 1/4 Red
  • 1 Yellow
  • 1/4 Purple
  • 1 tsp

Clean Eating Blueberry Baked Oatmeal

This has become one of my favorite recipes!  Super easy to prepare and delicious that my entire family enjoyed it!  We enjoyed it paired with 2% Fage greek yogurt or with unsweetened almond milk! Delicious!  this gluten free breakfast will be sure to please anyone! Enjoy!

Total Time: 40 minutes

  • 2 eggs
  • 1/2 cup applesauce (unsweetened)
  • 1/3 cup brown sugar (I typically use less around 1/4 cup or less)
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3 cups old fashioned oats
  • 1 cup milk (nonfat or almond milk, vanilla unsweetened is what I use)
  • 1 cup fresh or frozen blueberries 

  • Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with nonstick cooking spray.
  • Whisk eggs, applesauce, brown sugar, and vanilla until smooth. Stir in cinnamon, salt, and baking powder. Stir in oats and milk. Gently fold in blueberries. Spread in prepared pan.
  • Bake for 28-34 minutes until oatmeal is browned and not jiggly in the center. Cool slightly before serving. Serve with syrup and/or fruit or vanilla yogurt.
  • Store in refrigerator up to 2 days. You can also portion and freeze for quick morning breakfasts.
  • want to make it even lower in sugar?  leave out the brown sugar!
  • don't like blueberries? Try strawberries, raspberries or a mix!
