Peach Caprese Salad

Peach Caprese Salad

The first time I had this I thought ew no way! Cheese and peaches?  Boy oh boy was I WRONG.  I am a big fan of regular caprese salad so I knew I had to try it.  This  salad was amazing.  I found myself going back for seconds! 


4 large peach
2 8 oz. balls fresh mozzarella
16 fresh basil leaves
3 Tbsp. reduced balsamic vinegar. (Here is a good recipe mountain mama cooks but made half)


1. Cut the mozzarella into 16 slices, each about 1/4 inch thick
2. On a serving platter, arrange the cheese, basil leaves, and peaches in a fan pattern, alternating them in that order.
3. Drizzle with reduced balsamic vinegar
