Baked Avocado Fries

If you love avocados this recipe will NOT disappoint you!  
This was super easy and delicious. A fun alternative to fries.

  • 4 avocados, pits removed and cut into slices
  • ½ cup flour
  • 3 eggs + 2 tablespoons water
  • 1¼ cups bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt

  • ⅓ cup mayo
  • ⅓ cup sour cream or plain greek yogurt
  • juice of 1 lime
  • 2 tablespoons cilantro, chopped
  • 1 teaspoon garlic powder

  1. Preheat oven to 450 and grease a baking sheet with cooking spray.
  2. Add flour to a zip lock bag. Add avocado slices, seal, and shake to coat avocados in flour.
  3. Remove avocados from the bag and discard the bag with excess flour.
  4. In a small bowl whisk together eggs and water. In a separate bowl whisk together bread crumbs, garlic powder, chili powder, and salt.
  5. Dip flour-coated avocado slices into the egg wash. Next, toss them into the crumb mixture being sure to coat well.
  6. Place coated avocados in a single layer on the prepared baking sheet and spray generously with cooking spray. Bake for 10-15 minutes until crispy and browned.
  7. While avocado fries and baking, blend all sauce ingredients together.
  8. Serve avocado fries warm with dipping sauce. Enjoy!

Sweet Potato Brownie Bites


ooooh my goodness!!! how cute are these brownie bites.  
Here is an easy way to enjoy your brownies without all the calories.  Recipe is from the chew - daphine oz! Click here for the video on how to make them:  
  • 1 large sweet potato
  • 1/3 cup hot coffee
  • 1/3 cup mini chocolate chips
  • 2 tablespoons butter, melted
  • ·2 eggs
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 cup cocoa powder
  • 1/2 teaspoon salt


  1. Preheat oven to 350°F.
  2. Place a large sweet potato in a microwave and cook on high for 5 to 7 minutes or until completely softened. Scoop out of the flesh and discard the skin. Set aside 1 cup of flesh.
  3. Place the mini chocolate chips in a bowl. Pour the hot coffee over the chocolate chips and stir to melt the chocolate. Set aside.
  4. In a large bowl, combine the reserved sweet potato, butter, eggs, sugar and vanilla. Stir to combine. Then add the chocolate coffee mixture to the sweet potato mixture and stir to combine.
  5. In a separate bowl, whisk together the flour, baking powder, cocoa powder and salt. Add the dry ingredient mixture to the sweet potato mixture and stir just to combine.
  6. Using a mini cupcake tin, fill the cups 3/4 of the way with brownie mixture. Place in the oven to bake for 8 minutes.

       - Heat up leftover coffee or espresso.
       - Alternatively, roast the sweet potato until fork tender, for a sweeter, 
         more developed flavor.

Italian Chicken Bake

                                 Italian Chicken Bake

This delicious and easy to make dinner is sure to satisfy your family!

  • 3-4 Boneless Skinless Chicken Breasts
  • 4-6 Tablespoons Prepared Pesto
  • 1-2 Roma Tomatoes
  • 1 Cup Mozzarella Cheese, grated


  1. Trim the chicken and lay them in a glass baking dish in a single layer.
  2. Spread 1-2 tablespoons of the pesto on top of each chicken breast.
  3. Cut the roma tomatoes into slices approx 1/2" thick and lay 2 slices on top of each chicken breast.
  4. Sprinkle the cheese over the top of the chicken breasts.
  5. Bake at 400?F for 30-40 minutes or until the chicken is done and the juices run clear.
  6. Serve over a bed of rice or a plate of pasta. Enjoy!

Transformation Tuesday

 I am beyond speechless.  This girl has taken control of her health and fitness.  She hit a wall and was READY to CHANGE.  I am so glad we found each other and have become such great friends.  She has taken her journey one step further and has become a health and fitness coach as well!  I couldn't be more proud of you!!!  

This lovely lady lost a whooping 25lbs and 10" on the 21 Day Fix & Shakeology.  This is PROOF that portion control, clean eating and 30 minute workouts WILL get you RESULTS!  No more spending endless hours at the gym working out and eating a 1200 calorie diet.

Cauliflower Breadsticks

Cauliflower Breadsticks

Ohhh my goodness.  Does it seriously get any better?  For any of you who have had my cauliflower pizza you know this is going to be AMAZING!  If you loved the cauliflower pizza I recommend making a double or triple batch right off the bat!  I found this recipe on and cannot thank them enough for it!  Thanks guys!


  • 1 head cauliflower, large (7" - 8" wide)
  • 1/4 cup egg whites
  • 1/2 cup + 3/4 cup (for topping) Mozzarella/Tex Mex cheese, shredded
  • 1 tsp Italian herb seasoning or any dried herbs like rosemary, basil, parsley
  • 1/4 tsp freshly ground black pepper
  • Pinch of salt
  • Marinara sauce for dipping
  1. Preheat oven to 375 degrees F. Rinse cauliflower, remove outer leaves and separate into florets with a paring knife. Place cauliflower florets in a food processor and process until "rice" texture. Some coarse chunks are fine.
  2. Place in an oven proof baking dish (I used a pyrex dish) and bake for 20 mins. Remove cooked cauliflower from the oven and transfer to a bowl lined with a tea/linen towel (I used glass tea towel from a Dollar store, similar to this one). Let the cauliflower cool down a bit until it is safe to touch, about 15 minutes.
  3. Fold the towel holding by the ends and squeeze the liquid out of the cauliflower "ball" as hard as you can. Be patient and do this a few times until barely any liquid comes out. I squeezed out 1 cup of liquid. Second photo, from right to left: before squeezing, after squeezing, liquid squeezed out.
  4. Increase oven T to 450 degrees F. Transfer cauliflower to a mixing bowl along with egg whites, 1/2 cup cheese, herb seasoning, black pepper, pinch of salt and mix to combine.
  5. Transfer cauliflower mixture onto the baking sheet lined with parchment paper. Flatten with your hands into a rectangle, approximately 9" x 7" size and 1/4" thick.
  6. Bake for 18 minutes, remove from the oven and top with remaining 3/4 cup cheese. Bake for another 5 minutes and then broil until cheese turns golden brown. Cut into 12 breadsticks and serve hot with warm marinara sauce, if desired. P.S. For a lighter version, do not top with cheese.

Storage Instructions: Refrigerate covered for up to 2 days. You can also freeze the breadsticks tightly wrapped in plastic, for up to 1 month. Thaw on a counter or in a microwave.

Accountability Time

I want you to know that I DID NOT make a new years resolution this year.  I have in the past and I have always failed at sticking to my plan.  I made a lifestyle change last year in the Summer of 2014. For those of you who do not know my entire story please read it here. In a nutshell I went from having horrible anxiety and on medication to lowering my cholesterol, working out and being off my medication!  I became a health and fitness coach and took on my own goals for changing my weight and health.  So far I have lost 20lbs and a ton of inches (lost count!)  I lowered my cholesterol (see how I did that here) and have more muscle tone in my body then I have every had in my life (hubby can vouch for that one - ha).  

I have some big goals and it is not because it's January.  I have a trip coming up in March and I want to look and feel confident in sleeveless dresses and a bathing suit.  I am working out to Insanity Max 30 and will be pushing harder then ever before.  I am tired of my jeans fitting tight and I DO NOT want to buy more clothing.  I am TIRED of wearing leggings and feeling that that "LEGGING" is my paint size.  I am READY for this.  I am READY to step it UP A NOTCH! 

So it is accountability time for me.  I have seen these types of accountability jars before and really decided I needed to do this.  I am very visual so even on days I may feel good I can still look at these two jars sitting above my kitchen sink and say I SEE PROGRESS and I STILL NEED TO PUSH HARD!  So along with my challenge groups this is what is keeping me accountable each and every day!

Supplies Needed to Make Accountability Jars:
2 small glass vases or jars 
Chalk board stickers (or any other type of sticker or sticker letters)

I bought all these items at my local craft store!  Some I had already in my craft bin.  If your struggling for accountability make these crafty little guys.  They take just a few minutes!  If you do please share them with me! I would LOVE to see them.
