Roasted Sweet Potatoes with Figs and Goat Cheese


Sweet potatoes are one of my favorite foods!  They can be made in so many ways.  Just roast these bad boys up, toss them with juicy fall figs and sprinkle them with some goat cheese.  You will have the perfect dish for your holiday gatherings!  Enjoy!

Total Time: 40 min.
Prep Time: 10 min.
Cooking Time: 30 min.
Yield: 4 servings

Ingredients:
4 medium sweet potatoes, peeled, cut into ½-inch thick lengthwise batons
2 tsp. olive oil
1 tsp. chipotle chili powder (or chili powder)
Sea salt (or Himalayan salt) (to taste; optional)
4 ripe medium figs, cut into quarters
4 tsp. crumbled goat cheese
1 Tbsp. balsamic vinegar
Preparation:
1. Preheat oven to 400° F.
2. Place sweet potatoes in a large bowl. Drizzle with oil; toss gently to coat.
3. Season with chili powder and salt; toss gently to coat.
4. Spread sweet potatoes in a single layer on a baking sheet lined with parchment paper.
5. Bake for 20 to 30 minutes, turning once, until brown and tender.
6. Cool for 5 minutes.
7. Serve sweet potatoes topped evenly with figs and cheese. Drizzle evenly with vinegar.

Autumn's Banana Apple Muffins



All I can say is WOW!!! These little guys are AMAZING!  They are gluten free, no added sugar and the healthiest version of a muffin that I ever made!  My 2 year old son LOVED them too! HE seriously sate down and inhaled 2 of these muffins when they come out of the oven.  I mean who doesn't LOVE a warm muffin?  This recipe is courtesy of the amazing 21 day fix cook book!   Pick up a copy of yours here.

Containers used: 1 purple & 1 blue
Serves: 9 (1 muffin each)  
Prep Time: 20 minutes
Cook Time: 18 minutes

Ingredients:
2 large eggs, lightly beaten
1 cup mashed ripe banana (about 2 medium bananas)
2 Tsp. organic grass-fed butter melted
1 1/2 cups almond flour
3/4 tsp. baking soda, gluten free
1 dash sea salt (or Himalayan salt)
1/2 cup chopped apple (about 3/4 medium apple)

Directions:
1. Preheat oven to 350 F
2. Prepare nine muffin cups by lining with muffin tin liners or coating with spray
3. Combine eggs, banana, and butter in a medium bowl; mix well.  Set aside
4. Combine almond flour, baking soda, and salt in a medium bowl; mix well.
5. Add almond meal mixture to egg mixture; mix until blended.
6. Add apple' mix until just blended
7. Divide batter evenly between prepared muffin cups
8. Bake 16-18 minutes, or until golden brown and toothpick inserted into the center comes out clean.
9. Transfer muffins to rack; cool.

Tips:
1. If you want them to be sweet let your bananas ripen longer.  I personally do not like very sweet bananas so I used mine just as they were starting to get brown spots on the outside.  So if you want your muffins sweet try using the banana's when they have the cheetah print spots on them.

2.  If you would like a little more fiber and some omega-3 fatty acids, replace 1/2 cup of your almond flour with 1/2 cup of flaxseed meal.

3. You can make your own almond flour by processing 1 cup of slivered almonds in a food processor or blender with a strong motor.  Make sure that you pulse in 20-second intervals to prevent the almonds form turning into almond butter.  1 cup of slivered almonds yields approximately 1 cup of almond flour.

4. If you can't find almond flour in your store, you can look at club stores or online.

Caramalized Carrots with Curry Spice


Carrots are one of my favorite cooked veggies!  It must be because they are SWEET!  Plain carrots quickly transform into an irresistible side dish with the help of cilantro and three simple spices. With less than 50 calories, this is a great way to switch things up and get in some of your veggies for the day.
Total Time: 15 min.
Prep Time: 5 min.
Cooking Time: 10 min.
Yield: 4 servings
Ingredients:
1 lb. carrots, cut into 1-inch pieces on the bias
¼ tsp. sea salt (or Himalayan salt)
¼ tsp. ground black pepper
1 tsp. curry powder
¼ cup coarsely chopped fresh cilantro
Preparation:
1. Heat a medium cast iron (or nonstick) skillet over medium-high heat for 4 to 5 minutes.
2. Place carrots, salt, and pepper in skillet in a single layer; cook, turning occasionally, for 6 to 8 minutes, or until carrots are caramelized.
3. Add curry powder; cook for 1 to 2 minutes, or until carrots are tender-crisp. Remove from heat.
4. Top with cilantro; serve immediately.

Why Beachbody Coaching Scared Me

I can remember back to when I thought about becoming a Beachbody coach.  I thought about how I could NEVER do something like that.  I was pretty sure that the top coaches were hired by Beachbody to lead the company and be at the top.  BOY WAS I WRONG! I not only get to be on the top team of all of Beachbody but I get a weekly call with the top coach as well!  
We are normal people just like you, living crazy busy lives looking for that secret sauce.  Beachbody has become the secret sauce!  IT is a real program that is not a fad diet.  It has gotten me as well as my challengers REAL results.  Our CEO Carl Daikeler stands behind every product and workouts daily with us!  Now that is pure dedication!

I was scared.... because....
I was never athletic   
I never felt comfortable in my own skin
I lacked confidence
I had no experience with health and fitness


I was unhappy with myself and knew I needed a change.
I didn't want to fail 

However… I did know….
I was unhappy and need to make a change ASAP

Crush Your Labor Day Bloat!


Okay so you over indulged this Labor Day weekend! You ate the cupcake.  You ate the Bubba Burger.  You drank too much... it happened! Remember we are only human! What you do have control over is getting back to a healthier eating routine.

But you might be asking yourself.... how?  It is so hard to get back on track even after a long weekend of eating bad.  We get ourselves into the mindset of "I will start tomorrow" or "I will start next week" that is a slippery slope to get yourself on. That times passes and before you know it you are 6 months down the road and miserable.

5 Health & Fitness Tips to help YOU stay on track this Labor Day



Tip #1 Stick to your normal routine!
As much as you can that is!  Don't stress yourself out but try to stick to that 
normal routine. So if you feel your best when you workout in the morning make 
sure you continue to workout in the morning.  If you are traveling and don't have 
access to your programs go for a run. Mommies if you are with a hand full of 
kids... PLAY TAG!  It will tire them out and you will feel fulfilled! Get your cardio in 
somehow! :)  You will feel better doing something then missing that workout. 
 We are creatures of habit.  When we get off schedule and track our entire bodies 
are off.   I know for me personally I turn into a big GRUMP! The biggest reason I get 
like that is because I feel like I have lost control when I get out of a routine.  Getting 
off your routine makes it that much harder to get back into one.  So keep that routine! 
You can do this!



Tip #2 Pack a Cooler
Are you one of those people who party hop over the holiday weekends?  
One BBQ to another?  The cooler can be your answer!  I always pack a small 
cooler with ice packs, extra water, fruit, veggies, yogurt etc.  One of my favorite 
cooler snacks is my 2% Fage greek yogurt with fresh cut cherries.  It is simple to 
make and fills me up! Grab and go easy to eat and healthy items to help me stay
 on track.  So before I go into an event I will have my snack.  This helps me 
with preventing over eating because I am hungry and it also helps me stay on track.  
Now I can have some healthy fruits, veggies and a lean meat.   Another trick I do 
all the time is have my Shakeology on the way to the event.  This really helps me 
stay on track!  I stay full, helps curb my sweet tooth and allows me to feel 
energized and ready show that BBQ who is BOSS!



Tip #3 Bring a Dish 
Do you dread the friend who always has the best baked goods?  
The wonderful food?  All the things you don’t want to eat because you 
have been doing so well?  Don’t completely deprive yourself! Offer to bring a dish 
that you know you will eat so it will help you stay on track.  You can still have 
some cheat treats.  Remember cheat treats or cheat meals… not cheat days….  
Not cheat weekends!

 Tip #4: Live by the 80/20 Rule  
So the best thing is that you can have that cheat meal!  You can enjoy that 
burger and beans.  But what you can’t do is eat like that all day and all weekend.  
I eat clean and healthy 80-90% of the time.  I really try to control this throughout the 
week.  I eat salads, lean meats, clean healthy fulfilling foods.  I do this because 
know so well we travel a lot on weekends.  We are on the GO!  So I make sure 
that we eat as good as we can throughout the week so we can enjoy that slice of 
Pizza and a margarita!  Life is all about enjoying it and living so don’t deprive yourself!

Yes Yes Yes it's true I make Gnocchi and stock it in my freezer! SHH don't tell 
the clean eating fairy! :)  Well it is clean... it's just not the healthiest!  
But it's something we eat for a treat it is the one cheat meal I make at home.  
This stuff is worth every calorie!  Being able to workout and eat clean most of the 
time allows me to peacefully enjoy these little nuggets from heaven!  



Tip #5 Don’t Skip Breakfast 

know so many of you skip breakfast.  Yes I have been guilty of it before but skipping 
breakfast is the worst thing you can do for your body.  Don’t try to skip a meal to save 
calories for later.  Instead try to make a healthy breakfast like scrambled eggs with whole
 wheat toast vs. a pancake breakfast at your local diner!  My favorite breakfast is my 
Chocolate Cherry Shakeology!  Shakeology can help you stay on track throughout your 
day and will leave you feeling energized and will keep your body regular!

We are humans!  We have bad days!  We are not perfect! 
 This is not a ticket to go and ruin your weekend with bad choices.
