Arugula Summer Salad

This salad has everything I love!  It seriously couldn't be any better.  Big thanks for the Lean Clean Eating Machine for this recipe.  Enjoy!
Arugula Summer Salad

A light and refreshing summer salad, perfect on its own or as a side.
  • 2.5 – 3 cups arugula
  • ½ cup grape tomatoes; cut into halves
  • ⅓ cup white sweet corn
  • ½ of a ripe avocado; cubed
  • Fresh ground pepper to taste
  • ***Dressing:***
  • 1 large lemon; juiced
  • 1.5 – 2 Tbsp. Dijon mustard
  • 1 tsp. organic grapeseed oil
  • Salt and pepper to taste
  1. On a plate, layer your arugula, corn, avocado and tomato. Top salad with freshly ground black pepper.
  2. In a small dish, whisk together lemon juice, Dijon mustard, grapeseed oil and salt and pepper to taste.
  3. Spoon desired amount of dressing over salad and enjoy.
