Slow Cooker Thai Peanut Chicken

                                       
                                 
I love Thai food and I really love chicken.  So this is the perfect match for me.  I loved this dish and it is something we will make again and again!  If you like spicy add in some extra spice called asian chili sauce.  We love spice so we kicked it up a notch.  Enjoy!

Ingredients

Gluten free

Meat

  • 2 lbs Chicken breasts, boneless skinless

Produce

  • 1/4 cup Cilantro, fresh
  • 1/2 tsp Garlic powder or 2 garlic cloves
  • 1/2 tsp Ginger, ground
  • 2 tbsp Green onions, thin
  • 1/3 cup Peanuts, lightly salted

Canned Goods

  • 1 14-ounce can Coconut milk

Condiments

  • 1/4 cup Honey
  • 2 tbsp Lime juice
  • 3/4 cup Peanut butter, creamy
  • 1/4 cup Soy sauce, low-sodium

Baking & Spices

  • 1 pinch Cayenne pepper
  • 1/2 cup Cornstarch
  • 1/2 tsp Pepper
  • 1/2 tsp Salt

Oils & Vinegars

  • 1 tbsp Olive oil
  • 2 tbsp Rice wine vinegar
  • 1 tsp Sesame oil
